We have rain in the forecast and we have sun, and I my summer plan for dinners is to use the grill as much as humanly possible, so that’s what we’ll be doing on the dry days.
Dinners for the Week of June 3 – June 9
- Panang Curry: I plan to make this in a wok or on the stove rather than in the Instant Pot. Seems to me like I’m over the Instant Pot. We did transport the Instant Pot with us from the old house, but it’s lived in the basement ever since the move and this is the first time I’ve even considered an Instant Pot recipe. I know some people swear by theirs, but a) I’m afraid of it and b) we don’t really have a place to store it for Regular Use and c) I can get along just fine without it.
- Jalapeno-Onion Smash Burgers: My husband found this recipe in the June issue of Food & Wine (it’s very similar to this recipe). We made these burgers for Memorial Day and they were amazing. So I am jonesing to make them again. We use a cast iron pan on the grill and they are super easy.
- Grilled Fish Tacos: We haven’t had fish tacos in a hot minute and they sound so good. For the first time in my life, the cilantro I’ve planted is flourishing, so I plan to harvest a bunch and make a yummy cilantro lime crema.
- Whole Lemon Grilled Chicken with Zucchini: Nothing simpler than chicken and veg on the grill! This recipe sounds different and yummy.
- Grilled Veggie Salad with Lemon Basil Vinaigrette: What can I say? I love lemons. Perhaps I will make extra chicken from the previous recipe so my husband can have some with this salad.
I am also buying and eating all the berries. They are so good right now! What are you planning to eat all summer long?

Seriously, I am so over preparing food right now. I have no ideas, no motivation. We had grilled cheese THREE TIMES LAST WEEK. I’m not embarrassed about that (and we probably only had grilled cheese three times in the whole of the previous year), but that just tells you where I am right now.
Basically, I just want you to come over and cook for me because this all sounds amazing!
Oooh grilled veggie salad.

Yum yum to the Panang curry! But the instructions for the Instant Pot sound so cumbersome. By the time the pot heats up and seals, the “4 minute” cooking time for the chicken is going to be a lot longer, so there are no time savings there. Add in the longer time to clean the Instant Pot compared to your wok, and you’ll come out way ahead on time.
Well, the pickiest eater (North) will be at camp most of the summer so maybe we’ll just eat all the things they don’t like.
I cannot wait until the stone fruits start coming out. Cherries and nectarines – I am waiting (im)patiently for you!
In Georgia, I bought both cherries and nectarines this weekend. The cherries are not QUITE as sweet as I want them, and I haven’t tried a nectarine yet, but we love the same summer fruits!
Mmmm, Panang curry sounds really good! I would say you should ditch your IP. It’s a very large appliance so not worth keeping around if you haven’t felt compelled to use it. We use ours several times/week and I love it but the pressure cooking aspect doesn’t intimidate me since I’ve used an actual pressure cooker to can (which is way more intimidating, I think).
This week we are having ground turkey tacos tonight, stuffed peppers from costco another night and then I’ll make burgers with the Wagu beef that Phil bought at Aldi. I was planning to make chili for our 3rd dish but when he surprised me and bought Wagu beef, we pivoted to burgers. But now I have no vegetable side for that meal…
I’m looking forward to fresh produce but that is so far off for us! But besides fresh produce, we will grill quite a bit! We are not year-round grillers. We aren’t going to like shovel a path to our grill or have Phil stand out there in the cold grilling. For us, grilling is only for a season that doesn’t require you to wear a parka!
I love lemons too – I have chicken in the fridge that I should panang or lemon. Finally starting to feel a bit better so hopefully will cook this week – last week Matt was out for work dinners every night and Eve and I ate grilled cheese or… I literally can’t remember what else we ate. Oy. I did get some good cherries, though.
My late husband was a huge fan of Panang curry although we always bought ours from our favorite Thai restaurant. This week sounds like a yummy one!
To me, summer means no cooking! Sandwiches, salads, and fresh fruit are so yummy and simple. That’s my favorite thing about summer.
I don’t really know how to use the grill. The bonus to that is Coach cooks more in the warmer weather. The downside is we don’t use the grill on his late nights. We are all about taco salad right now, but I’ve been making it with ground turkey and there’s so many seasonings, no one is noticing.

I am looking for some new inspiration. WE don’t own a grill and I am debating if we should get one or not. I am not sure how much I would use it. But grilled veggies do sound fun.
Also the fish tacos sound like something I would like. I will definitely eat my two favorite vegetarian dishes “Schmorgurken” and “Kartofffeln und Quark” but I am slo planning to eat more beans and I saw some fun bean salads on Pinterest.
